Fast Pasta With Basil

Enliven ready-made pasta with a host of fresh ingredients. Fast, filling and altogether yummy.


  • 250g/ 9oz fresh ham tortellini, or another fresh pasta

  • 25g/ 1oz toasted pine nuts

  • 12 mild peppadew from a jar, sliced thinly

  • 3 tablespoons sundried tomato paste

  • 50g/ 2oz parmesan cheese, coarsely grated or shavings

  • Large bunch of fresh basil, chopped


  • 1.

    Cook the pasta into boiling salted water for about 3-4 minutes, or according to packet instructions. Drain and set aside.

  • 2.

    Add the pine nuts, peppadew and pesto to the empty pan and stir over heat for 1-2 minutes. Add the cooked pasta, basil and season with salt and pepper.

  • 3.

    Toss together, tip into a warm serving bowl, sprinkle with parmesan and serve.
