Bombay Potatoes


This makes the perfect accompaniment to any curry vegetarian or meat based. They are very easy to make, and the fresh flavours are very different when you do cook it yourself. Give it a go.

Serves 6 to 8

Ingredients

  • 3 tablespoons sunflower Oil
  • 1 teaspoon mustard seeds
  • 1 pinch of ground cumin
  • 1 teaspoon turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon chilli powder
  • 1 knob fresh ginger, peeled and finely chopped
  • 6 potatoes, peeled, parboiled and cut into cubes
  • 4 knobs butter
  • 4 tomatoes cores removed and flesh diced
  • fresh coriander, roughly chopped

Method

  1. Heat the oil in a pan and fry the spices for a few minutes.
  2. Add the butter, then the potatoes, making sure they are completely coated in the spicy mixture.
  3. Cook for about 10-15 mins, then stir in the tomatoes and the coriander.

    I made this for my brother but he doesnt like coriander so i did basil instead, and was just as good if not better

    Humility Chicken I have 4 teenage step children, who are teaching me many things. One of them is how much I don’t know! I have found humility – that modest sense of my own importance – invaluable! Humility is a spiritual way of life, and it allows us to see others well, and kindly. One simple thing I don’t know about my step children is how spicy they like their food. When I cook for them, I invite their feedback, so I can learn what they like. It also helps me know how to teach them to cook, so they can be more independent. I baked skinless, bone-in chicken breasts with green cabbage, red onion, thyme, chicken stock, sea salt, and lemon juice. Everyone liked this. But … Son number 2, Nate, made the same, but used jalapeno instead of lemon.     Further to previous comment: improvement to cooking:

    0. Pre-heat oven to gas 4 1. Par boil potatoes (simmer small chunks of potato for about 10 to 15 minutes). 2. Drain potatoes and sprinkle on salt for seasoning 3. Fry the spices for about 1 minute, stir continously so that spices do not stick to the pan and burn. 4. Add potatoes to the spice mixture and stir gently under low heat so that potatoes are well coated. 5. Stir in the diced tomatoes that have been seasoned with salt and pepper. 6. Put lid on the pan and transfer to preheated oven and cook for about 15 minutes.

    Result: really delicioius, these small improvements make a much tastier dish.

    Very tasty recipe . I felt that the sauce was rather thick and needed watering down; the potatoes lacked seasoning. At what stages in the cooking can one add water and seasoning?

    According to Pat Chapman in The New Curry Bible "The tomato and the potato were ignored by the Moghuls, Indian and British alike, until American missionaries brought them to India in the nineteenth century. Consequently, there are no traditional potato dishes. Fortunately, the potato is now fully accepted in India, but this explains why [Bombay Potato], which is now a curry-house classic, is yet another British restaurant invention."

    jo jo this is a bomb i added mince and onion as suggested and also cooked 3 med potatoes in skin until nearly done it makes a great one pot hearty meal

    It's one of my mum and dad's favourite dishes with a perfect corma or chicken curry made by me (i make the curry with a bit of help from dad)and they are even making it for friends

      it does say parboiled potatoes, that means part-cooked, firm but not cooked all the way through!

      The recipe says 6 potatoes. It also says peel them and parboil them whole and then chop into chunks.

    I substitute 1 tsp garam masala with half tsp garam masala and half tsp chaat powder(avail at all indian grocers). Also at the end , I add a little sugar. Altogether adds a lovely blend of tastes.

    This recipe is awesome i've made heaps. It is also nice with onions and mince. Also it does'nt take that long to cook which is great for when I come hope and need to whip up something easy and fresh. : )
