Sweet Sour Chicken Strips


A great way to use chicken and incredibly quick. You can whip this up in minutes - it makes a fantastic starter, and kids love the sweet sour combo.

Serves 2

Ingredients

  • 250g chicken breast cut into long strips, 2cm wide, 1cm thick

For the marinade:

  • 4 cloves garlic, crushed and finely chopped
  • 1 tbsp yellow bean sauce
  • 2 tbsp light soy sauce
  • 1 tbsp groundnut oil
  • 5 tbsp runny honey (plus extra for sauce)
  • 2 tbsp lime (or lemon) juice (plus extra for sauce)
  • salad leaves, to serve
  • Sweet chilli dipping sauce, to serve

Method

  1. Mix all the marinade ingredients into a bowl and add the chicken breast strips. Allow to marinade for as long as possible.
  2. Heat a griddle pan, cook the chicken strips until tender, for approximately 3 minutes depending on the size of the strips. During the cooking time, keep brushing the marinade onto the meat using a brush.
  3. Serve the chicken as a starter with the honey-sweet sour sauce, sweet chilli dipping sauce and some salad leaves.
  4. With the reserved marinade, heat a small pan and reduce until slightly thickened and serve as a dipping sauce. To make the sauce even thicker at this stage, add more running honey and a few squeezes of lime juice.
