Smashed Sardines


This upmarket sarnie is quick and full of flavour. Toasted sourdough bread is nicely chewy.

Serves 1

Ingredients

  • 2 slices sourdough bread
  • Light olive oil for brushing
  • salt and pepper, to season
  • 1 tin sardines, drained
  • 1 free-range egg, grated
  • 2 tbsp baby capers
  • 2 tsp chopped anchovies
  • 1 tbsp chopped fresh flat-leaf parsley
  • 1 tbsp extra virgin olive oil
  • Juice of half a lemon

Method

  1. Heat a griddle to smoking hot. Brush the bread with the oil and season well.
  2. Cook on the griddle for about a minute each side until nicely lined.
  3. Mix all the remaining ingredients together and season well.
  4. Spread over the toasted sourdough and finish with the rocket leaves and a drizzle of extra virgin olive oil.
