While mashed potatoes are very simple to make, a lot of things can go wrong. This is not the case, however, if you follow this foolproof method......
Firstly boil the potatoes, strain and then put the potatoes back on the heat for a few minutes, moving the pan around. This allows any excess moisture which could eventually cause lumps to evaporate.
Take the potatoes off the stove and mash perfectly before adding the rest of the ingredients. If you add the other ingredients before the potatoes are completely mashed it is almost impossible to get the lumps out.
Then add about 1 desert spoon of butter and stir, add some cream to enrich the flavour and stir and finally add one egg yolk and stir. This lifts the potatoes and they become very aerated.
Now enjoy your smooth, light and fluffy mashed potatoes!
