Steamed Syrup Pudding

Ingredients

  • 175g / 6oz self raising flour

  • 75g / 3oz softened butter

  • 50g / 2oz caster sugar

  • 1 egg

  • 6 tbsp milk

  • 2 tbsp golden syrup

  • devon clotted cream, to serve

Method

  • 1.

    Grease a 1 litre (2 pint) pudding basin.

  • 2.

    Mix together the flour, butter and sugar. Make a well in the centre add the egg and enough milk until it is smooth and glides off the spoon with ease. Spoon the golden syrup into the greased basin then pour in the pudding mixture.

  • 3.

    Cover the pudding with pleated greaseproof paper or foil and secure with string. Steam for 1 ½ to 2 hours. Serve hot with Devon clotted cream.
