Goat’s Cheese With Hot Pineapple Rings

Yes, it's trailer trash food but there's no doubting that it hits the spot. The perfect pick-me-up when you've had a bad day.

Serves 1 to 2

Ingredients

  • 100g round goat’s cheese with rind
  • 1 tsp chopped ginger
  • 4 tinned pineapple rings
  • 4 tbsp runny honey
  • 1 pinch of cinnamon

Method

  1. Lay pineapple out on a heatproof dish. Slice goat’s cheese into make thin round circles and place on top of pineapple slices. Drizzle with honey and grated ginger. Place under grill until bubbling and golden.
