Arrange the fruit in a stack formation in the centre of the plate, place the orange segments around the stack. Place the wine, cinnamon stick, cloves and the sugar in a pan and reduce by one half.
Then add the dried fruit and nuts and cook for a few minutes. Spoon the syrup over the fruit stack and arrange the dried fruit and nuts in between the orange segments and spoon over more syrup.
Place the raspberries on top of the stack. Serve with a big dollop of sweetened whipped cream and sprig of mint.
