Fried beef with green papaya salad


This recipe is of Vietnamese origin and perfectly typifies the freshness of the Far East.

Serves 2

Ingredients

  • 275g sirloin steak cut into strips
  • oil for deep frying
  • 150g green raw papaya finely shredded
  • 85g long beans, cut into 2.5cm lengths
  • 1 heaped tbsp of dry roasted cracked rice
  • 1 heaped tbsp of ground dried shrimp

Method

Cracked rice

  1. Place 35g of basmati rice in a hot pan with no oil or water and cook until golden brown, and then lightly crush in pestle and mortar.
  2. Mix all the marinade in a bowl, add the strips of steak and leave for 3 hours.
  3. Remove the meat from the marinade. Heat the oil to sizzling hot and briefly deep fry the steaks until lightly browned. Turn out and set aside.
  4. Place the papaya and long beans in a bowl, add all the ingredients and stir well. Just before serving, add the cracked rice and dried shrimp. Stir, and present on a plate and serve with the fried beef.
