Recipe by Ed Baines
Shelled oyster drained and strained
6 rashers of smoked bacon
Salt and pepper
2 tbsp of brown sauce
1 tbsp Worcester sauce
1 tsp of brown sugar
Splash of Tabasco
Squeeze lemon juice
Roll bacon round oyster and secure with a cocktail stick.
Roast at 180c for 10 minutes or until bacon is cooked.
Riesling, Semillon and Sparkling are the best wines to pair with Oysters wrapped in bacon.
