Figs and Chorizo


You wouldn't think this would work, but it does and beautifully so. The sweetness of the figs contrasts with the spicy meatiness of the chorizo. A stunning and unusual starter.

Serves 4

Ingredients

  • 450g chorizo
  • 1 small onion sliced length ways
  • 1 tbsp olive oil
  • 110ml manzanilla sherry
  • 110g sugar
  • 110 ml red wine vinegar
  • 1 stick cinnamon
  • ½ tsp cloves
  • 6 figs, quartered

Method

  1. Heat the oil in a medium sauce pan and add the chorizo, onion and garlic and sauté until the onion golden brown.
  2. Add the sherry, sugar, vinegar, cinnamon and cloves and simmer for 30 minutes. Just before serving, add the figs and heat through.
