Colcannon Mash with Blue Cheese


Mashed potatoes are heavely on their own, but add some Roquefort cheese and a handful of spring onions and they become irresistible.

Serves 3 to 4

Ingredients

  • 450g (1 lb) potatoes peeled and cut into halves
  • 6 finely chopped spring onions
  • 150 ml (1/4 pt) of milk
  • Salt and freshly ground pepper
  • Pinch ground mace
  • 25g (1oz) melted butter
  • 6oz Roquefort cheese

Method

  1. Place the potatoes and spring onions in a pan with the milk. Bring to the boil, cover and simmer until cooked.
  2. Mash the potatoes with the spring onions and season. Spoon into to an ovenproof dish and top with Roquefort cheese. Place under the grill to brown. Once browned remove from the grill and serve.

    I love Colcannon Mash and I cook it in the traditional way. I'm sure that this addition of Roquefort cheese adds deliciousness to a dish which is already heavenly. Brilliant idea: will make it tomorrow certain of a great outcome. Thank you!!!
