Pork, Herb and Mustard Burger


All meat fans fall in love with these burgers, which can be made in minutes and taste so much nicer than anything you can buy. Do use fresh herbs - they make all the difference.

Serves 1 to 2

Ingredients

For the burgers

  • 200g minced pork
  • 1 tbsp grain mustard
  • 1 tbsp runny honey
  • 1 tbsp chopped fresh sage
  • 1 tbsp chopped flat parsley
  • 1 egg yolk
  • 2 tbsp breadcrumbs
  • Zest of a lemon
  • 2 finely shallots

Accompaniments

Method

  1. Mix burger ingredients together. Build into patties and fry off in olive oil until golden brown.
  2. Slice and griddle the bread. Place patties in between. Top with the red onion slices, gherkins, capers, parmesan, a drizzle of olive oil, rocket and watercress.
  3. Serve with a relish of your choice.
