Mushroom stroganoff is one of the easiest things to cook. It's super-tasty and filling, especially if you serve it with boiled rice.
Cut portabella mushrooms into large batons, and roughly chop the other mushrooms and set aside.
Heat oil in a pan add finely chopped onions, garlic and leeks. Sweat them off and add the batons of portabella mushrooms and paprika and toss through until coloured.
Add the wild mushrooms and cook gently for a couple of minutes over a medium heat. Add parsley, vodka and a squeeze or lemon juice.
Then add vegetables stock reduce by half and finish with crème fraiche, salt, pepper and serve over boiled rice.
