Lazy Barbecued Chicken

No sun required for this easy-does-it barbecue chicken. If it's too wet to wheel out the barbie, simply cook in the oven.


  • allow 5 pieces of diced chicken thigh per person

  • Marinade ingredients

  • 1½ cloves of grated garlic

  • 500g tomato ketchup

  • 2 ‘shakes’ of tabasco sauce

  • 8 ‘shakes’ of worcester sauce

  • 1 tsp mustard

  • 6 tbsp clear honey

  • To serve

  • french bread

  • rice salad (plain rice with peas and vinaigrette)

  • mixed salad


  • 1.

    Mix all the ingredients together in a large bowl. Stir the diced chicken pieces into the mix and leave to marinade for 1 hr. Pan fry the chicken pieces to seal them.

  • 2.

    Put the chicken into oven or on the barbecue for about 30mins at 350 degrees.

  • 3.

    Serve with rice mixed with green peas and French bread. Also serve with a green salad containing a mix of iceburg lettuce, lollo rosso and cucumber. Dress with homemade vinaigrette.
