Mascarpone, lime and blackberry cream


A deliciously creamy mousse inside a crunchy meringue - a perfect after-lunch pudding that's ready in minutes.

Serves 7 to 8

Ingredients

  • 150g mascarpone
  • 100g cream cheese
  • 125g caster sugar
  • Finely grated zest of 1 lime
  • Juice and zest shavings of ½ lime
  • 125g crème fraiche
  • 12 blackberries
  • Shop bought meringue nests
  • Dash vanilla essence

Method

  1. Blend together the mascarpone, cream cheese, caster sugar, lime zest to give a smooth paste. Add the lime juice, double cream and yogurt and blend again to incorporate. Crush the meringue nests and fold into the mascarpone mix. Line a glass with blackberries and spoon the mousse mixture into the moulds, finish with lime zest shavings
