Noodle Soup with Black Beans

This hot noodle soup is comforting, quick and cheap. Tone the chilli factor up or down as you please and throw in any leftovers you have, such as cooked meat.


  • 200-250ml stock, beef or vegetable

  • 1 package ramen noodles

  • 1-2 tbsp tinned black beans, rinsed

  • 1 green or red chilli, sliced thinly

  • 1 handful of fresh vegetables such as sliced red pepper, sliced onion, peas

  • Light soy sauce, to taste

  • Juice of a lime

  • Handful of fresh coriander (optional), chopped


  • 1.

    Bring the water to the boil in a pan and add all the ingredients. Return to the boil, stirring, and cook until the noodles are tender - about 3 minutes.

    Spoon into deep bowls, check for seasoning - you may need more soy sauce or a squirt of lime - and add the chopped coriander.
