Chicken and Goat's Cheese Burger


Serves 4

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 teaspoon ground cumin
  • 1 knob fresh root ginger, chopped
  • 2 teaspoons chillies, chopped
  • 400g minced chicken breast
  • 1 tablespoon coriander, chopped
  • 1 egg
  • 50g bread crumbs
  • Salt and pepper
  • Touch of flour
  • 100g Kidderton Ash goat’s cheese or other firm goat’s cheese
  • Touch of olive oil

To serve

  • Toasted sesame bagels
  • 2 tablespoon mango chutney
  • Few rocket leaves
  • Squeeze fresh lime

Method

  1. Heat the olive oil and sweat the onion, garlic, cumin, ginger and chillies together until softened.
  2. Stir into the minced chicken and add the chopped coriander, egg, bread crumbs and salt and pepper.
  3. Flour a chopping board Shape into 8 small rounds and insert a slice of goat’s cheese in the centre of each, refrigerate until needed. When ready to serve, drizzle the burgers with a touch of olive oil and BBQ until cooked through.
  4. Serve on toasted bagels smeared with mango chutney, topped with rocket leaves and drizzled with fresh lime.
