Serves 3 to 4

Ingredients

Garnish

  • 4 large sprigs of chervil
  • 8 chives
  • 2 soft boiled quail's eggs (halved)

Method

  1. Process all the ingredients except the coriander in a blender, thin with water if necessary season to taste. Put through a fine sieve and chill for two hours.
  2. Serve in bowls and garnish with eggs, chives and chervil.
