Pear Upside Down Cake


Yes, this is rich but wow is it yummy, and a great way to use pears.

Serves 4

Ingredients

Method

  1. Sift flour with baking powder. Beat eggs with sugar until light.
  2. Stir in the flour mixture, then stir in clotted cream and the milk. Melt butter; stir in cinnamon and brown sugar. Grease an 8inch cake tin with butter and line the tin with grease-proof paper.
  3. Pour butter mixture into the tin and place sliced pears over butter mixture then
  4. gently spread dough over pears. Bake at 350° for 25 minutes; reduce heat to 325° and bake another 20 to 25 minutes, or until cake is done. Cool for at least 5 minutes; turn out onto a serving dish. Serve with clotted cream.
