Fusion Salmon


Easy Eastern salmon with an abundance of interesting flavours.

Serves 1

Ingredients

  • Raw salmon, sliced
  • 1 red chilli, finely chopped
  • 1 clove garlic, finely crushed
  • Juice of ½ lime
  • Shot of tequila
  • 1 tsp olive oil
  • 6 tbsp finely chopped coriander stalks
  • 2 tbsp chopped lychees

Method

  1. Blend the lychee to form a pulp.
  2. Fold through the tequila to make a dressing.
  3. Mix together the chilli, garlic, lime juice, olive oil and coriander stalks.
  4. Mix with the lychee tequila pulp, spread over the sliced salmon and serve with a sprig of coriander and a wedge of lime.
