Very Berry Pudding


This clever pudding will bail many a cook out of a culinary emergency. Made almost entirely from store-cupboard or frozen ingredients and bags of ingenuity, it tastes and looks terrific.

Serves 4

Method

  1. In a dry pan, toast the muesli and place them in a clean bowl. Pour over half the Cointreau or Grand Marnier to soak for about 5mins along with the honey and keep aside.
  2. In a separate bowl, whisk the mascarpone or yoghurt, then fold in the soaked oats.
  3. In another bowl, whisk the egg whites until light and fluffy. Fold the whites into the cheese and muesli mix
  4. Chill 4 glasses, then place the frozen fruits into the base of a glass and drizzle over a little orange liqueur. (What you are doing is dividing the second half of the liqueur into 8 equal parts to make 2 layers in each of the 4 glasses). Scoop over a dollop of cheese/yoghurt muesli mix and repeat the process a second time, finishing with a dollop of cream mix. Dust lightly with icing sugar and a sprig of mint.
