Baked Beans With Sautéed Chorizo and Chick Peas


Quick, easy and full of flavour. The perfect answer when you are home late and hungry.

Serves 2

Ingredients

  • Dash olive oil
  • 75g/2¾ oz diced chorizo
  • 410g/14 oz tin baked beans
  • 150g/5½ oz tinned chick peas
  • 50g/1¾ oz halloumi cheese, grilled and diced
  • salt and pepper, to season
  • 1 tbsp chopped parsley
  • Small bunch of rocket leaves

Method

  1. In a pre heated non stick frying pan, add the chorizo and cook until crisp, add the beans, then the chickpeas and then the halloumi cheese and the rocket leaves. Season, mix in the parsley and serve. Garnish with a drizzle of oil.
