Parmesan and Cornflake Basket


Aldo show you a versatile way to use up your cornflakes with the help of some parmesan. Serve it as a starter.

Serves 2

Ingredients

  • 250g grated parmesan
  • 100g cornflakes
  • 100g smoked salmon
  • 150g watercress
  • Small bunch dill
  • Dessert spoon crème fraiche

Method

  1. Lay out the grated cheese and place a layer of cornflakes on top. Finish with a layer of cheese creating a cornflake sandwich. Place under the grill on a pastry mat until the cheese melts.
  2. Remove and let it cool then mould over the base upside down bowl to form a basket. Leave to cool.
  3. Place the watercress, salmon into the cornflake basket and garnish with dill and crème fraiche.
