Spinach, tomato and goat's cheese work brilliantly together in this easy-peasy recipe. Serve it with crusty bread and a rocket salad.
Preheat the oven to 190C/375F/Gas 5.
Add the spinach to the pan and cook for 2-3 minutes, then dry with kitchen roll.
Take a pre-rolled sheet of puff pastry (rolled out 2cm/¾in thick), take a side plate and use it as a template by placing it on the pastry and cutting around it. Brush the pastry circle lightly with beaten egg yolk.
Place the spinach on the pastry. Add the slices of tomato in a crescent spiral and season.
Slice the goats' cheese log and arrange in a spiral on top of the tomatoes.
Drizzle over olive oil, salt, pepper and dried thyme (optional). Bake in oven for 15 to 20 minutes. Serve with a rocket salad.
