Feta and Red Onion Tart


Simple and stylish. Serve these warm from the oven or pack them into a picnic box to be eaten cold with a tomato salad.

Serves 1

Ingredients

  • 1 small red onion – chopped
  • 150g feta – cubed
  • 8 sunblushed tomatoes – chopped
  • 4 leaves fresh basil – shredded
  • 1 teaspoon white wine vinegar
  • 1 tablespoon olive oil
  • 2 x cheese pastry tartlets

To Serve

Method

  1. Mix together the onion, feta, tomato, basil, vinegar and olive oil and then season.
  2. Place in the pastry tarts and bake 180ºc for 5 minutes.
  3. Serve with the salad leaves and Sherry vinaigrette
