Glazed Ham

Zesty Glazed Ham on the Bone, with Fresh Mango Salsa.

Ingredients Ham
  • 1 leg ham
  • 1 orange zest and juice
  • 2 teaspoons Dijon mustard
  • 1 cup brown sugar
  • sea salt
  • freshly ground Black pepper
  • Clove
Mango Salsa
  • 3 ripe mangos diced
  • 1 small Red Onion finely diced
  • 1 finely chopped Red chilli
  • sea salt
  • freshly ground Black pepper
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive Oil
Method Ham
  • Preheat oven to 180°C.
  • Place orange juice and zest, mustard, brown sugar, salt and pepper together in a small bowl and stir to combine.
  • Cut skin off ham, leaving a layer of fat and leaving skin on the hock in a zig zag pattern.
  • Score ham in diamond pattern and place cloves in corners of diamonds.
  • Place ham in a baking dish, spread glaze over ham covering ham completely.
  • Place in oven, reapplying the glaze at ten minute intervals, and bake for thirty minutes until ham is golden and glazed.
Mango Salsa
  • Place mango, onion and chilli in a bowl and season with salt and pepper.
  • Drizzle with olive oil, lemon juice and gently stir to combine.
