Grease a glass pyrex bowl or ovenproof dish.
In a large bowl beat together the butter and sugar until pale and creamy
Then add the egg yolks, flour, grated zest and juice of 2 lemons and the milk. Don't worry if it looks curdled.
Whisk the egg whites together until they form soft peaks and fold gently into the lemon mixture.
Pour the mixture into the dish and place in the microwave.
Cook on full power for approximately 5 minutes (cooking times may vary according to your microwave power rating).
Leave to stand for 1 minute before serving.
