Coriander Crackers


Whip up a batch of these and store in an air-tight container for when the munchies strike. They taste great with a hunk of Lancashire cheese or you can serve them as canapes with a topping of your choice.

Serves 6

Ingredients

  • 100g mature cheddar cheese
  • 25g butter
  • 50g plain flour
  • ½ teaspoon baking powder
  • Pinch cayenne pepper
  • ½ chilli, finely chopped
  • 1 tablespoon chopped coriander

To serve:

  • Rocket leaves
  • Squeeze of lemon

Method

  1. Place the cheese, butter, flour, baking powder, cayenne pepper and coriander into a food processor and blitz until it comes together to a dough.
  2. Flour a work surface and roll out thinly – cut into rounds and bake in a hot oven for about 8 minutes until a light golden.
