Roasted Red Pepper Bruschetta


This Mediterranean-style recipe has a holiday feel to it and makes a quick, tasty snack or starter. Serve on small portions of bread for a chic canape. Try adding slices olives, and for non vegetarians add anchovies.

Ingredients

  • Roasted red peppers - a jar or deli pot is fine
  • 2 slices crusty white bread, drizzled with olive oil and griddled
  • 50g / 2oz anchovies, chopped (optional)
  • 25g / 1oz pine nuts

Method

  1. Slice pepper from jar. Put pepper slices onto griddled bread. Add the chopped anchovies if you are using them and pine nuts and serve.
