Now there are 2 main ways to cook chicken soup – the traditional kosher way and the quick way.
Lewis Family Chicken Soup:
Wash the chicken to remove any blood and excess salt (for Kosher chicken).
In a large pot, add chicken, whole carrots, celery and chicken booster and cook for approx 1.5 hrs.
Strain the soup removing the vegetables and chicken.
Chop the vegetables and pull the chicken meat of the bones returning it to the soup.
Cool overnight and skim the fat off the top.
Boil the noodles separately with some salt then add to the reheated soup.
