This is the ultimate store-cupboard supper, and very tasty it is too! Serve it with fish or meat, or alone with some warm grilled naan bread or pitta.

  • 175ml / 6 fl oz fresh chicken stock

  • salt and pepper, to season

  • juice of ½  lemon

  • 25g / 1 oz butter

  • 1 small bunch mint, chopped

  • 1.

Heat the olive oil in a frying pan and fry the bacon until golden and crisp. Add the lentils, peas and stock. Bring to a rapid simmer to heat through and season with salt, pepper and lemon juice. Stir in the butter to thicken and finally stir in the mint.

  • 2.

Serve hot as an accompaniment to a piece of fried or grilled fish such as cod, haddock or salmon, or eat simply as it is.
