Braised Lentils with Peas and Bacon


This is the ultimate store-cupboard supper, and very tasty it is too! Serve it with fish or meat, or alone with some warm grilled naan bread or pitta.

Serves 1

Ingredients

  • 1 tbsp olive oil
  • 4 slices of smoked streaky bacon, cut into thin strips
  • 1 packet of cooked puy lentils
  • 250g / 8 oz frozen peas, defrosted
  • 175ml / 6 fl oz fresh chicken stock
  • salt and pepper, to season
  • Juice of ½  lemon
  • 25g / 1 oz butter
  • 1 small bunch mint, chopped

Method

  1. Heat the olive oil in a frying pan and fry the bacon until golden and crisp. Add the lentils, peas and stock. Bring to a rapid simmer to heat through and season with salt, pepper and lemon juice. Stir in the butter to thicken and finally stir in the mint.
  2. Serve hot as an accompaniment to a piece of fried or grilled fish such as cod, haddock or salmon, or eat simply as it is.
