Summer Squash

A yummy, refreshing drink that makes good use of in-season strawberries. Serve it on hot summer days with crushed ice or lemonade.


  • 225g / 8oz hulled strawberries

  • 4 tbsp caster sugar

  • 450ml / ¾ pint water

  • Few drops rose water (or orange water)

  • ½ lemon

  • Iced water, to serve


  • 1.

    Combine the strawberries with the caster sugar and the water. Add a few drops of rose water to taste.

  • 2.

    Puree in a liquidizer and then pass through a fine sieve. Pass the lemon juice through the sieve as well.

  • 3.

    When ready to drink, dilute with still water, fizzy water or even lemonade if you desire.
