Chocolate and Vanilla Baked Alaska


This is a great show-off pudding that appeals to everyone from kiddies to grandparents. A fabulous finale to a family meal.

Serves 6

Ingredients

  • 1 thin sheet of chocolate sponge – cut into a rectangle
  • 4 tbsp chocolate spread
  • 2 litre rectangular tub of good quality vanilla (or chocolate) ice cream (not soft scoop)
  • 4 fl oz egg whites
  • 225g caster sugar
  • Few drops almond essence
  • 2 punnets fresh raspberries
  • Icing sugar to taste
  • Few sprigs fresh mint
  • Orange liquer, such as Grand Marnier

Method

  1. Take the sponge and spread with the chocolate spread, un-mould the tub of ice cream and place on top – place on an ovenproof serving dish.
  2. Whisk the egg whites to soft peaks then gradually whisk in the sugar and add almond to taste.
  3. Smear the meringue all over the ice cream and then pipe the remainder to form a design.
  4. Bake in a hot oven at 180ºC for 5 minutes or until golden and toasted.
  5. Mash 1 punnet of raspberries in a bowl and sweeten with the sugar and add orange liquer to taste.
  6. Decorate the Alaska with the raspberries and mint then serve immediately.
