You can also use coconut sugar for a healthier Bread !!!!

This is the best breakfast toast, easy and second only to Bill's banana bread. I take it to work to toast when on the run, my daughter says that it is equal to that she has at Bill's, I really do not think so. Love the coconut bread!

Simple to make and so easy to eat! This can also be sliced, wraped in plastic wrap & frozen for 3 weeks in a sealed container.How good is that for a lazy weekend breakfast?

These batters are easily over mixed. Make sure that you stir only enough to just bring it together otherwise it is pretty leaden!

This was very easy and quick, and no electric mixer required! Bliss! I froze a loaf (after cutting into thick slices) and grab a bit, toast it, pour a coffee ... Yum! Makes getting up on a work day easier!
