Chicken and Sweetcorn Fritters

These are fun and easy for kids to make, and tasty too. You can use peas or baby broad beans too. Serve them hot or cold.


  • To serve


  • 1.

    Lightly beat the eggs, and then add the flour and sour cream so you have a thick batter. Stir in the chicken, sweetcorn, spring onion and season with salt and pepper.

    Heat a tablespoon of olive oil in a frying pan over a low-medium heat. Place tablespoons of the mixture into the pan and press down to form flat fritters.

  • 3.

    Cook for a couple of minutes until they are golden, and then turn over and cook until the bases are also golden. Repeat with the remaining mixture, adding more oil as you go.

  • 4.

    Serve with some sour cream, guacamole, sweet chilli sauce and lime wedges to squeeze over.
