Sweet Potato Cake


Kids love this recipe, and it's easy for them to cook too. If they turn their nose up at creme fraiche, serve with mayonnaise or good old tomato sauce.

Serves 1 to 2

Ingredients

  • 1 sweet potato, peeled, boiled and mashed
  • 2 spring onions, chopped
  • Pinch ground coriander
  • Pinch ginger
  • 1 teaspoon chopped red chilli
  • 2 rashers smoked bacon, cooked until crisp and golden
  • 1 egg
  • 200g plain flour
  • 2 tablespoons olive oil

To serve

  • 2 tablespoons crème fraiche
  • Few salad leaves

Method

  1. Mix together the mashed sweet potato, bacon, onion, coriander, ginger, chilli and egg. Mix in the flour until it comes together to a nice dough. Flour a chopping board and roll out to 2cm thick, cut into rounds the size of a tumbler. Heat the oil and fry until golden on both sides.
  2. Serve with a dollop of crème fraiche.

    Thanks, this recipe was totally delish, instead of ground coriander I used some fresh chopped coriander and this created a nice texture within the potato cake.
