Angel Hair Pasta with Mussels Arrabbiata


Home late? This spicy smoky seafood pasta can be on your plate in five minutes flat. Angel hair pasta cooks in a jiffy, but you can use spaghetti or linguine too.

Serves 2

Ingredients

  • 60ml good olive oil
  • 3 garlic cloves, crushed
  • 2 fresh red chilli, finely chopped and deseeded
  • 450g cherry tomatoes , cut in half
  • 400g angel hair pasta,
  • 2 tins of smoked mussels. drained
  • 100g grated parmesan
  • 10 basil leaves, ripped
  • 1 tbsp chopped parsley
  • 50 ml white wine

Method

  1. Heat the oil in a pan and add the garlic, chilli and cherry tomatoes and sauté for about 5 minutes until the garlic is soft, make sure that you cook over a medium heat as you do not want to burn the garlic. If you wish at this point you could discard the garlic because the olive oil would have already infused.
  2. Cook the angel hair according to pack instructions and drain thoroughly.
  3. Add the pasta, mussels and Parmesan to the pan with a little of the water from the pasta pot and toss to combine, serve immediately with a sprinkling of fresh basil and parsley.
