Stir Fried NZ Pippies With Asian Flavours


Serves 4

Ingredients

  • Olive oil for cooking
  • 4 garlic cloves chopped
  • 1 tablespoon chopped ginger
  • 500 g pip pies soaked for 1 hour
  • 125 g palm sugar
  • 60 ml soy sauce
  • ½ cup basil leaf
  • ½ cup mint leaf
  • ½ cup coriander leaf
  • 3 long green shallots finely sliced

Method

  1. Heat a little olive oil in a wok until very hot.
  2. Add the garlic and chilli and stir fry 1 minute.
  3. Add the pippies with a splash of water and place a tight fitting lid over the wok.
  4. Cook until the pippies open.
  5. Add the palm sugar, soy, herbs and shallots and stir fry a further minute or 2.
  6. Finish by adding your choice of pasta or noodles and stirring through.
