Chilli Honey Pistachio Lamb Chops

The chops can be served with: Carrot sambaro, hot Thai dressing and spinach mash.

Serves 4

Ingredients

  • 8 lamb chops french trimmed
  • 100 g pistachios nuts
  • 75 g arcia honey
  • 2 medium rocket dried chilli's
  • Ground nut oil

Method

  1. Heat oven to 200/fan 180c/gas6
  2. Chop the pistachios and chillies in a food processor and set aside on a plate.
  3. Warm the honey in a pan for 2mins.
  4. Sear chops on both sides quickly in a frying pan.
  5. Brush with honey, then coat in the nut and chilli mixture.
  6. Place on a baking tray and drizzle over a little more oil.
  7. Cook in the oven for about 6-8 mins or longer if you prefer medium or well done.
  8. Leave to rest before serving.
