Place pork in a non-metallic flat dish and coat with Soy Sauce. Cover and marinate for 30 minutes. Meanwhile, combine 50ml Sweet Chilli Sauce and lime juice and place in a small saucepan ready for heating later.
Remove pork from marinade and pat dry with paper towels. Heat a non- stick frypan on high and sear pork on all sides until browned. Reduce heat and cook for another 8-9 minutes, or until pork is done to your liking. Set aside to rest for 5 minutes.
Meanwhile, steam or microwave bok choy in the normal manner. Set aside. Warm the sweet chilli sauce in the small saucepan. Slice pork into thin slices. Place bok choy on individual plates and place pork slices on top. Drizzle the heated sauce over and serve immediately.
