Barbequed Chicken

Salsa is the Mexican and Spanish name for sauce. It can signify cooked or fresh mixtures and they can range in spiciness from mild to mouth searing.

Ingredients

  • 2 chicken leg and thighs, boned and flattened
  • Extra virgin olive oil
  • 3 cloves garlic
  • 2 long red chilli's split and de-seeded
  • Sea salt
  • Freshly ground black pepper
  • Of 1 lemon

Salsa

  • 2 cloves garlic
  • Sea salt
  • pepper
  • 1 long red chilli split, de-seeded and roughly chopped
  • 1 large ripe tomato peeled, skinned and diced
  • 2 tablespoons toasted almonds
  • 1 tablespoon parsley leaves
  • Red wine vinegar
  • Red wine vinegar

Method

  1. Marinate the chicken pieces in the olive oil, garlic, chilli, salt and pepper.
  2. Squeeze the lemon juice over the chicken.
  3. Place the chicken on a hot BBQ and cook through, turning once.
  4. To make the salsa, pound the garlic and salt in a mortar and pestle, followed by the chilli.
  5. Add the tomato and a little extra salt, the almonds, parsley, red wine vinegar, olive oil and pepper. Place aside.
  6. Plate up the chicken and serve the salsa on the side.
  7. Drizzle a little more olive oil over the top.

    i feel this is the wrong recipe for that photo. that marinate is the chicken Neil cooked on Kangaroo Island. I really want the recipe that matches that photo. The marinate as you can see has parsley in it, saffron , paprika. It was placed under the skin of the chicken, pan fried, sealled and placed in the oven for about 20 mins. Any chance of receiving correct recipe!
