Potato and scallops pancake, crème fraiche, chives and caviar


Serves 8

Ingredients

  • ½ kg riced floury Potato
  • 4 egg whites
  • 3 Eggs
  • 4 tablespoons Plain Flour
  • 75 ml Cream
  • 75 ml Milk
  • 200 g fresh Scallops roe removed and chopped
  • 4 tablespoons finely chopped chives
  • salt and freshly ground black pepper

garnish

  • crème fraiche isigny
  • salmon Caviar
  • Olive Oil

Method

  1. Boil the potatoes & put through a ricer.
  2. Add the potatoes to a blender, add the egg whites, whole eggs, flour, cream & milk, blend to a smooth batter.
  3. Add the chopped scallops, chives & season with salt & freshly ground pepper.
  4. Cook the scallop & potato pancakes in small blinis pans in a little butter in a hot oven for 8 – 10 minutes till slightly firm.

garnish

  1. Serve the pancakes on warm plates garnished with quenelles of crème fraiche & a tsp of salmon caviar.
