Bucatini All'Amatriciana

A classic Italian pasta recipe.

Serves 4

Ingredients

  • Extra virgin olive oil
  • 1 medium spanish onion sliced
  • Sea salt
  • 2 cloves sliced garlic
  • ½ teaspoon chilli flake
  • 100 g smoky bacon roughly chopped
  • 1 tin italian tomato roughly chopped
  • 100 g dried bucatini per person
  • Pecorino cheese
  • Parmigiano reggiano

Method

  1. Heat a fry pan and add a little extra virgin olive oil.
  2. Add the onion and salt and fry a couple of minutes to bring out the flavour.
  3. Add the garlic, chilli flakes and bacon and cook 3 to 4 minutes.
  4. Add the tomatoes and simmer a further 2 minutes.
  5. While the sauce is simmering, cook the pasta in plenty of boiling salted water for about 8 minutes or until al dente.
  6. Strain and add to the sauce.
  7. Spoon the pasta on to a serving platter and grate plenty of fresh pecorino and parmesan over the top.
