Bucatini All'Amatriciana

A classic Italian pasta recipe.


  • Extra Virgin Olive Oil

  • 1 medium Spanish Onion sliced

  • sea salt

  • 2 Cloves sliced Garlic

  • 0.5 teaspoon Chilli Flake

  • 100 g smoky bacon roughly chopped

  • 1 tin Italian tomato roughly chopped

  • 100 g dried Bucatini per person

  • Pecorino Cheese

  • parmigiano reggiano


  • 1.

    Heat a fry pan and add a little extra virgin olive oil.

  • 2.

    Add the onion and salt and fry a couple of minutes to bring out the flavour.

  • 3.

    Add the garlic, chilli flakes and bacon and cook 3 to 4 minutes.

  • 4.

    Add the tomatoes and simmer a further 2 minutes.

  • 5.

    While the sauce is simmering, cook the pasta in plenty of boiling salted water for about 8 minutes or until al dente.

  • 6.

    Strain and add to the sauce.

  • 7.

    Spoon the pasta on to a serving platter and grate plenty of fresh pecorino and parmesan over the top.

It's so easy to "whip up" & is absolutely delicious (we added a touch of chilli jam as well!)
