Huevos Rancheros


Ingredients

bean mix

  • 4 small Chorizo Sausages sliced
  • ½ Red Onion finely chopped
  • 1 Clove Garlic sliced
  • ½ Habaneras Chilli seeds removed and finely sliced
  • 2 large ripe Tomatoes finely chopped
  • 1 can mixed bean washed and drained
  • ½ cup Water
  • Salt to taste

tortilla

  • 4 small Tortillas
  • 100 g Auricchio Auretta sheep/goat cheese
  • 4 Eggs
  • Sour Cream

red salsa

  • ¼ small Red Onion finely diced
  • 1 medium Avocado finely diced
  • 1 roma Tomato seeds removed & finely diced
  • Lime juice
  • Oil
  • Sugar
  • Salt & Pepper combine all ingredients and taste for seasoning

green salsa

  • 2 tablespoons Coriander finely diced
  • 1 jalapeno chilli finely diced
  • 2 tablespoons Cucumbers finely diced
  • Lime juice
  • Oil
  • Sugar
  • Salt Combine all ingredients and taste for seasoning

Method

  1. To make bean mix sauté onion, chorizo, chilli & garlic for a few minutes.
  2. Add fresh & tinned tomatoes & water simmer away for 10 minutes.
  3. Add beans and simmer for another 10 minutes, stirring occasionally so it doesn’t stick.
  4. Remove from heat
  5. Make red and green salsas.
  6. Place tortillas on oven tray & top with shaved cheese then bean mix. Bake in 180 deg oven until tortillas start to crisp up then remove.
  7. Fry eggs in pan and place on top of heated tortilla
  8. Top with salsas and serve with a nice dollop of sour cream.
