Haloumi is a soft or semi-hard Cypriot cheese with a salty flavour, made from either sheep or goats' milk.
It can be soaked in milk to remove a bit of the salt if desired.

  • 1.

    To make the salad, place the bread in a large bowl with the Spanish onion, cucumber and tomato.

  • 2.

    Add a splash of extra virgin olive oil and red wine vinegar and season with salt and pepper.

  • 3.

    Mix well, add the torn basil and place aside.

  • 4.

    Heat a little olive oil in a fry pan.

  • 5.

    When hot, add the cheese.

  • 6.

    Turn the haloumi when it starts to form a crust and soften. Cook the same on the other side.

  • 7.

    Place the bread salad onto a plate and gently place the haloumi on top.

  • 8.

    Add an extra dash of olive oil and a grind of pepper.
