Grilled Haloumi


Haloumi is a soft or semi-hard Cypriot cheese with a salty flavour, made from either sheep or goats' milk. It can be soaked in milk to remove a bit of the salt if desired.

Serves 2

Ingredients

  • 4 thick slices crusty bread
  • ½ Spanish Onion roughly chopped
  • 1 Lebanese cucumber roughly chopped
  • 1 large ripe, firm Tomato roughly chopped
  • Extra Virgin Olive Oil
  • red wine vinegar
  • sea salt
  • freshly Ground black Pepper
  • 8 fresh Italian Basil torn
  • 8 x 1/2 cm thick slices Haloumi

Method

  1. To make the salad, place the bread in a large bowl with the Spanish onion, cucumber and tomato.
  2. Add a splash of extra virgin olive oil and red wine vinegar and season with salt and pepper.
  3. Mix well, add the torn basil and place aside.
  4. Heat a little olive oil in a fry pan.
  5. When hot, add the cheese.
  6. Turn the haloumi when it starts to form a crust and soften. Cook the same on the other side.
  7. Place the bread salad onto a plate and gently place the haloumi on top.
  8. Add an extra dash of olive oil and a grind of pepper.
