Pasta with Cherry Tomato Vinaigrette


Italians love making use of seasonal produce and this dish is no exception.

Serves 4

Ingredients

  • pasta (enough for 4 people)
  • Sea salt and freshly ground pepper
  • Extra virgin olive oil
  • 4 fresh small red chillies, finely chopped
  • 2 cups sweet cherry tomatoes , in half
  • Splash red wine vinegar
  • 2 tablespoons basil leaves, roughly chopped
  • 2 tablespoons italian parsley leaves, roughly chopped
  • Parmesan, to serve

Method

  1. Bring a large pot of salted water to the boil and cook the pasta for 6 minutes.
  2. Drain.
  3. Heat a little extra virgin olive oil in a pan.
  4. Add the chillies and saute ½ minute.
  5. Add the tomatoes, a splash of red wine vinegar and freshly ground pepper.
  6. Mix through.
  7. Add the basil and parsley and finally the pasta.
  8. To serve, transfer the pasta to a service bowl and finish with parmesan and more fresh herbs.
