Hot and Sour Cucumber Salad


Serves 4 to 6

Ingredients

Salad

  • 875 g small Cucumbers peeled
  • 1 large green chilli dee-seeded and finely sliced
  • 1 large Red chilli de-seeded and finely sliced
  • 2 spring onions trimmed and finely sliced

Dressing

  • 4 Garlic Cloves finely clopped
  • 5 cm piece of Ginger finely chopped
  • 1 tablespoon brown sugar
  • 3 tablespoons brown rice Vinegar
  • 3 tablespoons light soy sauce
  • 2 teaspoons Sesame Oil

Method

Salad

  1. Cut cucumbers in half lengthways and then into 5 mm (¼ in) slices on the diagonal.
  2. In a bowl, combine cucumber with chillies and spring onions.

Dressing

  1. To make the dressing, combine ingredients in a small bowl. Spoon dressing over salad, toss gently and serve.

    This recipe is simple and works well. I didn't de-seed the cucumbers as the recipe doesn't say to, but this might be an idea as the salad goes very soggy after a few hours in the fridge. One to be made and eaten straight away and toss the leftovers.
