Stir-Fried Choy Sum with Garlic


Serves 4 to 6

Ingredients

  • 1 bunch choy sum
  • 2 tablespoons peanut oil
  • 1 teaspoon sea salt
  • 3 roughly crushed garlic cloves
  • 2 tablespoons shao hsing wine
  • 2 tablespoons water
  • ½ teaspoon sesame oil

Method

  1. Trim choy sum and wash thoroughly.
  2. Heat peanut oil in a hot wok until surface seems to shimmer slightly. Add salt and garlic and stir-fry for 10 seconds. Add bok choy and stir-fry for 1½ minutes.
  3. Add shao hsing wine and stir-fry for 30 seconds. Add water and stir-fry for a further 30 seconds or until leaves are just tender. Stir in sesame oil and serve immediately.

Notes & Tips

Any other Chinese greens, such as bok choy or gai lan, would also work well in this simple stir-fry.
