Asparagus, Olives and Prawn Salad


This healthy salad of asparagus, olives and prawns makes for a delicious treat!

Serves 10

Ingredients

Method

  1. Blanch the asparagus in plenty of boiling salted water, drain and refresh.
  2. Heat the BBQ to medium-high and grill the prawns till golden.
  3. Toss the asparagus spears with the preserved lemon, capers, olives, lemon juice, olive oil and seasoning.
  4. Arrange the asparagus in a large bowl and serve with the prawns.

    This is so great and easy to make - altho I did add some twists due to no preserved lemons and added a couple of extra things. Recipe is versatile as you could easily replace prawns with calamari or tuna. Thank you for a great recipe that is inspiring, easy, tasty, refreshing and most importantly, ranks highly with he who thinks he should be obeyed :) !
